Irish Soda Bread

Is it weird to say “Happy St. Patrick’s Day” when things are so crazy in the world? Well…I still hope this St. Paddy’s Day finds you well, wherever you are. I just thought I’d pop in to share a lil’ something I whipped up with just a few pantry staples—actually, three somethings: baby loaves of Irish soda bread!

Nate and I had to cancel our celebratory end-of-med-school trip to Ireland and Paris—because, duh—so it only felt fitting to try our hand at baking up this stuff. This recipe over on Food52 caught my eye because I already had everything it called for except for raisins, and I was pretty sure my local grocery store wasn’t having a raising shortage. (Turns out I was right.) I just had to make one adjustment: Divvy up the dough into three 6-inch cake pans rather than plopping it all into one 10-inch pan, then shorten the baking time to 26 minutes. I’m pretty sure I love how mine turned out even better.

Anyway, all of that is to say is that this soda bread was wonderful and not at all difficult. If you’re finding yourself with lots of free time, I suggest whipping this up ASAP. Even if it’s not St. Patrick’s Day.
